I have not been cooking much since I’ve had Eliza. It has been a few months of figuring out new schedules and finding the quickest easiest meals we can. One meal that is always quick and easy for us is veggie burgers!
Burgers are a stable in my house. We eat lentil or black bean burgers at least once a week. They are always great for leftovers and packed lunches as well!
Here is my recipe for the EASIEST spicy lentil burgers!
{ ingredients }
- 1 package of Trader Joe’s Steamed Lentils (OR 2/5 cups of prepared lentils)
- 2 garlic cloves
- 1/2 red onion large onion
- 1/8 cup ground flax seed (OPTIONAL)
- 1/2 cup old fashioned oats
- 1 tsp. chili powder (or more to taste)
- 1 tsp. red pepper flakes
- 2 tbs. whole-grain mustard
{ directions }
- Combine all ingredients and pulse a food processor lightly until combined. If you don’t have a food processor, dice your garlic and onion and mash in a large bowl until over half of the lentils are smashed and all ingredients are combined. Add salt and pepper to taste.
- Using your hands, form patties and fry or grill until lightly browned and crispy on both sides. Serve on fresh lettuce wraps or buns and top with fresh veggies.
- Enjoy! Yum!
Makes about 6 servings.

Sounds yummy! I usually eat my veggie burgers cut up on top of a salad with chopped pickles, tomatoes, and onions. I’ll have to give this recipe a try!
