{ The Easiest Lentil Burgers }

I have not been cooking much since I’ve had Eliza. It has been a few months of figuring out new schedules and finding the quickest easiest meals we can. One meal that is always quick and easy for us is veggie burgers!

Burgers are a stable in my house. We eat lentil or black bean burgers at least once a week. They are always great for leftovers and packed lunches as well!

Here is my recipe for the EASIEST spicy lentil burgers!

{ ingredients }

  • 1 package of Trader Joe’s Steamed Lentils (OR 2/5 cups of prepared lentils)
  • 2 garlic cloves
  • 1/2 red onion large onion
  • 1/8 cup ground flax seed (OPTIONAL)
  • 1/2 cup old fashioned oats
  • 1 tsp. chili powder (or more to taste)
  • 1 tsp. red pepper flakes
  • 2 tbs. whole-grain mustard

 { directions }

  1. Combine all ingredients and pulse a food processor lightly until combined. If you don’t have a food processor, dice your garlic and onion and mash in a large bowl until over half of the lentils are smashed and all ingredients are combined. Add salt and pepper to taste.
  2. Using your hands, form patties and fry or grill until lightly browned and crispy on both sides. Serve on fresh lettuce wraps or buns and top with fresh veggies.
  3. Enjoy! Yum!

Makes about 6 servings.
