{ Cumin Roasted Sweet Potatoes }

Who doesn’t love roasted sweet potatoes? I make these all the time to add to tacos, quinoa dishes, risottos, couscous, you name it!

{ ingredients }

  • 2 large sweet potatoes, skinned and cut into 1-inch cubes
  • Olive oil (or coconut oil)
  • 2 tbs. Ground Cumin (maybe more to taste)
  • Fresh ground sea salt and pepper (to taste)

 { directions }

  1. Preheat oven to 375 degrees.
  2. Put sweet potatoes in a bowl and drizzle with EVOO, cumin, salt and pepper. Stir until fully coated
  3. Place mixture on a baking sheet and cook for 25-30 minutes. Cook until potatoes are cooked and slightly browned
  4. Add more cumin, salt and pepper to taste.
  5. Enjoy! Yum!

{ Other Ideas  }
Instead of cumin, roaste sweet potatoes with

  • Just salt and pepper
  • Garlic salt and fresh rosemary
  • Honey and fresh thyme
  • Curry powder
