Sweet Potato Bean Burgers

{ Sweet Potato Bean Burgers }

I have shared MANY of my favorite veggie burgers! I saw this recipe and wanted to combine my love for bean burgers and sweet potatoes all in one perfect vegetarian burger! Here is my version of a sweet potato bean burger!

{ ingredients }

  • 1 15 oz. can of black beans, drained
  • 1 large sweet potato, peeled and cubed
  • 1 Tbs. olive oil
  • 1/2 red onion
  • 1/4 cup plain breadcrumbs
  • 1/4 cup old style oats
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • Salt and pepper to taste
  • 1 cup wheatgerm (optional)

 { directions }

  1. Preheat your oven to 375.
  2. Drizzle your sweet potato cubes with oil and roast for 20-25 minutes, until lightly browned. (You could also use left over chili roasted sweet potatoes or cumin roasted sweet potatoes)
  3. Add all ingredients to your food processor and pulse until combined. You can make them as smooth or as chunky as you wish.
  4. Using your hands, form patties and roll to coat in wheatgerm. Cook on grill, griddle or skillet until lightly browned and crispy on both sides. Serve on a lettuce wrap, toasted bun or on their own, and top with your favorite condiments.
  5. Enjoy! Yum!

Makes about 6 burgers. 184 calories per patty.
