I am not the first person to share Buffalo Cauliflower Tacos…but that doesn’t stop me from singing their praises!

So so so good! I dare you not to crave them after your first taste!

{ ingredients }

  • Large head cauliflower, cut in bite sized pieces
  • 3 Tbs. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. chili powder
  • 3 Tbs. Ghee

  • Cracked pepper to taste

  • Tortillas
  • Romaine lettuce, chopped
  • Large avocado, pitted and diced
  • Green Goddess (store bought or homemade)
  • Cilantro and/or green onion diced (optional)

{ directions }

  1. Preheat oven to 425 degrees and line a baking sheet.
  2. In a large bowl combine cauliflower, olive oil, garlic powder, chili powder, pepper and 1/2 cup of buffalo sauce. Stir to combine. Spread evenly on baking sheet & cook for 30 minutes or until lightly browned.
  3. Heat up the remaining buffalo sauce and ghee in a saucepan.
  4. Remove cauliflower from the oven and place it back in the bowl. Add remaining heated sauce and stir to combine.
  5. To assemble tacos, load each tortilla with romaine, avocado and cauliflower. Drizzle with Green Goddess and top with cilantro or green onions.
