Tomorrow, I’m going to attempt to start my second Whole30, but tonight, I’m eating cheese, drinking wine & nibbling in dark chocolate!
Since beans & legumes are not allowed (not that I can promise I will not be sneaking in lentils this month), I’m breaking out the black eyed peas tonight to bring all the good luck for the new year!
{ ingredients }
- 1 cup cooked black eyed peas
- 1 jalapeño, diced
- 1 clove of garlic, minced
- 3 green onions, chopped with ends removed
- 1/2 of a mango, chopped
- 1 avocado, cubed
- 1/2 red onion, chopped
- 1 1/2 tsp. Cumin
- Small handful of cilantro, chopped
- Juice from 2 limes
- 1 Tbs. olive oil
- Plenty of sea salt & pepper to taste

Mix all ingredients in a bowl. Add salt and pepper to taste. Enjoy as a side or with chips of your choice!
Make a day ahead or serve fresh!
