{ Cherry Date Truffles }

I shared a couple versions of these healthy treats when we did the Whole30 (Fig Balls & Coconut, Date & Pepita Balls). 

Here is a similar recipe for more decadent chocolaty cherry date truffles!

{ ingredients } 

  • 1 cups raw pumpkin seeds (pepitas)
  • 1 cups unsweetened shredded coconut or coconut chips
  • 1/2 cup medjool dates, pitted
  • 1 cup dried cherries
  • 2 Tbs. Coconut oil
  • 6 Tbs. Cacao powder

{ directions } 

  1. Place all ingredients (just 2 Tbs. of the cacao powder) in a food processor and pulse until well combined.
  2. Roll into balls and roll in the remaining cacao powder.
  3. Eat right away or store in the fridge.

Recipe make 24-30 balls. These are great as a snack, a dessert or as breakfast.
