{ Lemony Egg Salad } 

I’ve posted egg salad recipes before (here & here), but I’ve been craving it again and made this easy lemony dill version and wanted to share! This is a very simple and easy egg salad recipe that satisfied my craving perfectly! 

{ ingredients }

  • 8 hard boiled eggs, chopped 
  • 1/4 cup mayonnaise (homemade preferred)
  • 2 Tbs. Dijon mustard
  • 1-2 Tbs. lemon zest
  • 4 Tbs. fresh dill, chopped
  • 1 tsp. Paprika 
  • Salt & pepper to taste
  • Sourdough bread, sliced radishes, avocado & pickles to serve 

{ directions }

  1. Mix dill, mustard, mayo, lemon zest and paprika until combined.
  2. Combine eggs in bowl and stir in mustard dressing until well coated. Add salt & pepper to taste.
  3. Serve alone of on a slice of your favorite toast! I served on sourdough bread topped with sliced radishes, avocado & spicy pickles! Yum!

Makes 4 servings. Great as a side, appetizer or as a main course.
