{ Tarragon Shallot Grilled Asparagus }

It’s grilling season! For me that means veggie burgers and lots of sides!

Here’s a quick recipe for grilled asparagus with a tarragon shallot vinaigrette!

{ ingredients }

  • Bunch of fresh asparagus, cleaned & trimmed
  • 1 small shallot, diced
  • 1-2 Tbs. fresh tarragon
  • Juice from one lemon
  • 4 Tbs. olive oil
  • Plenty of salt & pepper

{ directions }

  • Mix all dressing ingredients together in a small jar. Shake until well combined and let sit at least 30 minutes.
  • Pour half of the vinaigrette over the asparagus to coat before grilling. Grill over medium heat until lightly charred.
  • Transfer to serving dish and pour the remaining dressing over top. Season with ore salt and pepper if needed.
  • Eat! Enjoy!
