{ Charred Artichokes & Yogurt Dill Dip }

I have been trying to perfect these for years! I think I’m finally pretty close! I added an extra couple of minutes to the blanching (because my last batch was just a bit tough).

Here is my recipe for charred artichokes with yogurt dill dip!

{ ingredients }

ARTICHOKES

  • 4 large artichokes
  • 1 lemon
  • 3 cloves of garlic
  • A few springs of thyme
  • 2 Tbs. olive oil
  • Salt

YOGURT DILL DIP

  • 1 cup of Greek yogurt
  • Handful of fresh dill
  • 1 lemon
  • 2 cloves of garlic
  • 2 Tbs. olive oil
  • Salt & pepper to taste

ARTICHOKES

  1. Trim stems and halve the artichokes then rinse well in cold water. Rub with lemon.
  2. Place artichokes in pot of water (I did this in two batches). Add garlic, salt, thyme and lemon and bring to a boil. Lower heat to a low boil and simmer for 6-8 minutes.
  3. Remove from water and lay on a paper towel to drain.
  4. Before serving, brush with olive oil and grill on medium heat until charred.
  5. Squeeze extra lemon on top and serve warm with yogurt dill dip.

YOGURT DILL DIP

  1. Add all ingredients to food processor and pulse until smooth. Chill until serving.
