{ Limoncello Mascarpone Pie }

I LOVE limoncello…more than a friend! If there is a limoncello on a menu, I HAVE to try it. My husband is the same. We love all things limoncello, lemon curd, tart and sour. Our wedding cake had lemon curd and fresh berries. Inspired by these flavors, here is the easiest dessert I’ve ever made, perfect for spring or summer holidays or potlucks! Here’s a recipe for limoncello mascarpone pie!

{ ingredients }

  • 2 8-oz containers of mascarpone cheese (this is my fav)
  • 1 cup of sugar (or more if you prefer sweeter)
  • 1/2 cup fresh lemon juice
  • Lemon zest from one large lemon
  • 3 Tbs. limoncello
  • 1 package of ladyfingers
  • Fresh berries

{ directions }

  1. Mix cheese, sugar, lemon juice, zest and limoncello in a bowl. Whisk until smooth and refrigerate for at least an hour.
  2. Layer ladyfingers in a pie pan, covering the bottom and rimming the outer edge (I cut these in half to have enough for the entire rim).
  3. Layer berries on top of the ladyfingers, and then pour the limoncello mascarpone mixture over. Spread evenly and then top with more berries and a bit of lemon zest.
  4. Refrigerate for at least an hour (or even overnight).
  5. Serve alone or with fresh whipped cream!

Makes 8 servings!
