{ Coconut Tortillas } 

Calling All Whole30ers (who are craving carbs on day 4 like me)

Stop what you are doing & make these 3-ingredient coconut tortillas!

They are sugar free, grain free & gluten free….and they are DELICIOUS! I wouldn’t describe them as exact replicas of tortillas, but they taste great and hold together. I topped mine with sautéed veggies (onion, bell pepper, mushrooms & asparagus with coconut oil, cumin & ancho chili powder), guacamole & jicama. These may be a new weekly recipe for me.

{ ingredients } 

  • 1/2 cup coconut flour
  • 1 1/2 cups coconut milk (unsweetened)
  • 6 eggs

{ directions } 

  1. Whisk ingredients together until smooth. Let the batter sit for a minute or two to thickening caused by coconut flour. The batter should be very runny before cooking.
  2. Heat a small skillet over medium heat and grease lightly with the oil of your choice (I used olive oil). Pour 1/4 cup of batter onto the skillet and immediately tilt in different directions to evenly distribute. Cook, covered, until the edges are golden & curl inward when you lift the lid (about 2 minutes). Flip over, cover again, and cook until browned on the other side (2 more minutes). Repeat until the batter is used up.
