{ Coconut, Date & Pepita Balls } 

On day 7 of the Whole30, I was ready for some sweets. I’ve never used dates much, but I knew that they can be used to sweeten healthy natural desserts. There’s some debate on making substitutes for desserts on the Whole30, but if you allowed to have dates, unsweetened coconut & raw pumpkin seeds, why not have them blended together!?

Here’s a recipe for coconut, date and pumpkin seed balls. Warning: they are delicious!

{ ingredients } 

  • 2 cups raw pumpkin seeds (pepitas)
  • 2 cups unsweetened shredded coconut or coconut chips
  • 1 cup medjool dates, pitted
  • 2 Tbs. Ground flax seed
  • 2 Tbs. Coconut oil
  • 2 Tbs. Unsweetened cocoa powder (OPTIONAL)

{ directions } 

  1. Place all ingredients in a food processor and pulse until well combined.
  2. Roll into balls and roll into additional shredded coconut (optional).
  3. Eat right away or store in the fridge.
  4. Enjoy! Yum!

Makes 24 balls. 71 calories each. These are great as a snack, a dessert or as breakfast.
