{ Holiday Salad }

As the token vegetarian at many a holiday gathering, people usually ask me to bring a salad. I take this responsibility seriously! Let’s face it, we all hae to balance out our holiday sweets, with some delicious and nutritious greens and veggies!

Here is a great salad for any holiday gathering (hint: this should be on your Christmas table). This salad has all things holiday and all things yummy, including figs, pomegranates, pear, orange zest and balsamic.

{ ingredients }

DRESSING:

  • 1 Tbs. honey (OPTIONAL)
  • 1 Tbs. orange zest
  • 3 Tbs. balsamic vinegar
  • 1 heaping Tbs. whole grain dijon mustard
  • 1/2 tsp. salt
  • dash of pepper
  • 1/4 c. olive oil
SALAD:
  • 1 lg. romaine (or your preferred greens)
  • 1/4 c. dried figs
  • 3 springs of mint, leaves removed and chopped
  • 1/cup of candied nuts (optional – I prefer praline pumpkin seeds)
  • 1/4 c. pomegranate seeds
  • 2-4 green onions, chopped (white and green part)
  • 1 pear, cubed (or apple)

{directions }

  1. Mix sall dressing ingredients, other than oil. Add oil slowly and whisk.
  2. Mix salad ingredients in large bowl.
  3. Toss with dressing.
  4. Enjoy! Yum!

Makes 4-6 servings.
