{ Kohlrabi & Apple Slaw } 

I find a GIANT kohslrabi at the Eastern Market in Detroit that I couldn’t wait to try! I made my favorite Sweet Potato & Black Bean Enchiladas, and this slaw was a perfect compliment, bright and refreshing. Here’s a recipe for kohlrabi and apple slaw with tarragon and lemon!

{ ingredients }

  • 1 giant kohlrabi (or 2-3 small), peeled and cut into matchsticks
  • 1 large honey crisp apple, cut into matchsticks
  • 1 Tbs. Tarragon, finely chopped
  • 1 Tbs. Cilantro, finely chopped
  • 2 Tbs. fresh lemon juice
  • 1/2 tsp. lemon zest
  • 1 tsp. honey (OPTIONAL)
  • 1 Tbs. olive oil (I used Tuscan Herb)
  • Plenty of freshly cracked salt & pepper

{directions }

  1. Mix kohlrabi and apple in a bowl.
  2. Add lemon juice, oil, honey, herbs, salt and pepper to a small bowl and stir until well combined. Pour over slaw and stir until well coated. Add salt and pepper to taste.
  3. Refrigerate for at least an hour before serving.
  4. Enjoy! Yum!

Makes 6-8 servings. Make and serve or make the day ahead and refrigerate until serving.
