{ Easy Peasy Thumbprint Cookies } 

This may be the easiest cookie recipe I’ve found! I’ve made these a few times already this holiday season, and they’ve turned out perfect each time. Here’s an easy peasy recipe for thumbprint cookies!

{ ingredients }

  • 2 sticks of butter, softened
  • 1/2 cup of powdered sugar 
  • 2 tsp. pie vanilla
  • Pinch of salt 
  • 2 cups of flour 
  • 1/2 cup of fruit preserves, homemade or store bought (I used fig & cherry)
  • Extra powdered sugar for dusting 

{ directions }

  1. Preheat the oven to 325°F. Whisk together butter and sugar in a bowl until smooth.
  2. Add in vanilla, salt and then flour. Star until well combined
  3. Scoop and roll into balls, adding a fingerprint divot (the thumbprint) in each cookie. Fill each thumbprint with fruit preserves. I did 12 with fig and 12 with cherry. 
  4. Bake 20 minutes or until lightly browned on the bottom. Let cool and dust with powdered sugar. 
  5. Enjoy! Yum!

Makes 24 cookies.
