{ Overnight Oats } 

I’m not the first to share a recipe like this, but I’ve tried several and this is my favorite combination for perfect overnight oats. This recipe is simple and can be easily adjusted for your sweetness or thickness preference.

Here is my recipe for overnight oats with coconut milk, chia seeds & maple syrup!

{ ingredients }

  • 1 1/2 cups steel cut oats
  • 2 1/2 cups coconut milk (unsweet)
  • 2 Tbs. chia seeds
  • 1 Tbs. ground flax (optional)
  • 1 Tbs. coconut oil (optional)
  • 1-4 Tbs. maple syrup (to your sweetness preference)

{ directions } 

  1. Toast steel cut oats in a pan on low for 3-5 minutes.
  2. Add all ingredients to a jar or container with a lid (I like to use a wide mouth mason jar). Shake to combine well and refrigerate overnight (at least 4-8 hours).
  3. Eat alone, or add your favorite fruit, nuts or other toppings.
  4. Enjoy! Yum!

TIPS:

  • Add more coconut milk if consistency seems too thick.
  • Add more chia seeds if you prefer.
  • Add 1 Tbs. of maple syrup before refrigerating, and then taste and add more to preference.
  • Add topping before serving, not in the jar. Top with fresh fruit, dried fruit, nuts, seeds, coconut flakes, etc.
