{ Watermelon & Arugula Salad }

Just another yummy summer salad to add to my Fourth of July Favorites! We make this every year. Here’s a recipe for a simple watermelon and arugula salad with a champagne vinegar vinaigrette.

 { ingredients }

  • 1 seedless watermelon, cubed (cut as much as fits in your desired serving bowl)
  • 1 cup blueberries
  • 2 cups baby arugula, washed and spun dry
  • 1 cup fresh mint leaves, julienned
  • 4 green onions, cleaned and chopped (white and green parts)
  • 1/4 cup minced shallots (1 large)
  • 1/2 cup good olive oil
  • 4 Tbs. champaign vinegar
  • 1 tsp. kosher salt
  • 1/2 teaspoon freshly ground black pepper

 { directions }

  1. Whisk together oil, vinegar, shallot, salt and pepper.
  2. Add watermelon, blueberries, arugula, mint and green onions to a large bowl. Pour dressing over and stir until well combined.
  3. Serve immediately or chill for a few hours.
  4. Enjoy! Yum!

OPTIONAL: top with 1 cup feta cheese
