{ Vegan Sloppy Joes }

Ok, I admit it, this is a bit of a cheater recipe, but it is one of my favorites!

I’ve been making these vegan sloppy joes for years. This add-in recipe used to be on the box, but I don’t see it anymore. Just so we all have it typed up for years (and years) to come, here is my semi-home vegan sloppy joe recipe.

(maybe this will inspire me to actually make homemade sloppy joes this summer)

{ ingredients }

  • Two boxes of Fantastic Foods Vegetarian Sloppy Joes 
  • 4 Tbs. tomato paste
  • 4 Tbs. olive oil or butter
  • 3 cups vegetarian broth
  • 1 cup of tomatoes, diced (I use a mixture of roma and cherry tomatoes)
  • 2 white onions, chopped
  • 2 cloves of garlic, minced
  • 4 Tbs. brown sugar
  • 5-6 Tbs. chili powder
  • 1-2 tsp. cayenne pepper (optional)
  • 1/2 cup of fresh basil, chopped
  • Hamburger buns or lettuce wraps
  • Other toppings you may want: jalapeno, cheese, sour cream, mustard, red onion, avocado, fresh tomatoes, etc.

{ directions }

  1. Prepare sloppy vegetarian sloppy joes according to the box(using broth instead of wanter): bring broth, half the oil, mix and tomato paste to a boil and simmer until liquid is absorbed.
  2. While this simmers, add the rest of the butter or oil into a pan with your chopped onions. Let them cook and caramelize for a few minutes before adding. Add the brown sugar and stir until it melts into the onions. Pour in the garlic, chili powder, cayenne, and fresh basil.
  3. Let tomato and onion mixture cook on medium heat until onions are cooked and all is well combined.
  4. When the sloppy joe mix has absorbed most of the liquid, add in the tomato mixture. Stir together and serve warm.
  5. Enjoy on a toasted bun or a lettuce wrap and top with your favorite toppings.
