{ Roasted Beets & Sweets with Orange, Mint & Feta }

Is there anything better than roasted vegetables? What about roasted beets and sweet potatoes? No! There is NOTHING better! Here is a recipe for a roasted beet and sweet potatoes salad with oranges, mint and feta! So yummy!

 { ingredients }

  • 2 large sweet potatoes, skinned and cut into 1-inch cubes
  • 2 large sweet beets, skinned and cut into 1-inch cubes
  • 4 Tbs. Olive Oil
  • 2 Tbs. White Balsamic Vinegar
  • 2-3 Tbs. Mint, chopped
  • 1 Orange (or three clementines), peeled and chopped into bite-sized pieces
  • 1/4 Red Onion, chopped
  • Fresh ground sea salt and pepper (to taste)
  • 1/4 cup Feta (OPTIONAL)

 { directions }

  1. Preheat oven to 375 degrees.
  2. Put sweet potatoes and beets in a bowl and drizzle with 3 Tbs. oil, salt and pepper. Stir until fully coated
  3. Place mixture on a baking sheet and cook for 25-30 minutes. Cook until soft and slightly browned and crispy.
  4. Take out of oven and let cool slightly. Mix roasted veggies, the other Tbs. of oil (I ised a blood orange olive oil), vinegar, onion, mint, oranges and feta in a large bowl.
  5. Add salt and pepper to taste. .
  6. Enjoy! Yum!

Makes about 6 servings. Serve alone or over a bed of greens.
