{ Snap Peas, Cucumber & Mint }

It’s sugar snap pea season! Is there anything better than snap peas fresh from the garden? Snap peas are yummy raw and pair perfectly with my Green Goddess Dip. Here is a recipe for for a Spring salad with snap peas, cucumbers and mint, in a lemon vinaigrette. This is an awesome light side dish to bring to a cookout this weekend!

 { ingredients }

  •  1 pound of snap peas (stems and strings removed, and cut into thirds)
  • 1 large cucumber, peeled and chopped
  • Small handful of fresh mint leaves, chopped (about 10 leaves)
  • 1 shallot, diced
  • Juice from 1 lemon
  • 1 Tbs. agave or sugar (OPTIONAL)
  • 3 Tbs. olive oil
  • Plenty of sea salt & ground pepper (to taste)

{directions }

  1. Combine snap peas, cucumber, and mint together in bowl.
  2. Stir lemon, oil, shallot, salt and pepper in a small bowl or shaker. Pour over snap pea mixture and stir until combined.
  3. Serve immediately or refrigerate for later
  4. Enjoy! Yum!
