Sweet Cornbread Pudding

{ Sweet Cornbread Pudding }

I have MANY favorite Thanksgiving dishes, but cornbread pudding is definitely on the list. I am not promising this is vegan or healthy…but it is yummy. I hope you add it to your spread this year!

{ ingredients }

  • 2 large eggs
  • 2 1/2 cups of fresh corn, off the cob (or one can of one of whole-kernel corn, drained)
  • 1 can of sweet corn, cream style
  • 1 Tbs. honey
  • 1/2 cup melted butter
  • 1 cup plain Greek yogurt, or sour cream
  • 1 package (8 1/2 oz) of sweet cornbread/corn muffin mix
  • 1/4 tsp. paprika

{ directions }

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients, other than the cornbread mix, until well combined. Add in the cornbread mix slowly.
  3. Pour the batter into the prepared baking dish. Sprinkle paprika over the top.
  4. Bake for 40-45 minutes, or until a knife comes out of the center clean. Let cool slightly before serving.
  5. Enjoy! Yum!

Makes 12 servings.
