{ Roasted White Balsamic Brussel Sprouts }

It is no secret that I am OBSESSED with brussel sprouts! I’ve shared recipes here before! Here is an easy recipe for roasted white balsamic brussel sprouts with pomegranate seeds. A perfect addition to your holidays!

{ ingredients }

  • 1 pound brussel sprouts, cleaned and halved
  • 1 pomegranate, seeds removed and cleaned
  • 2 Tbs. Coconut oil
  • 3-4 Tbs. white balsamic vinegar (you can use a plain or a fruit flavor like orange or pear)
  • 1 tsp. pink Himalayan salt (more to taste)
  • dash fresh ground black pepper
  • Walnuts, halved and toasted/roasted

{ directions }

  1. Toss half of the vinegar, the coconut oil and the sprouts in a large bowl.
  2. Spread on a baking sheet. Roast in the oven on 400 degrees for about 20 minutes, or until slightly browned and fragrant.
  3. Move to bowl or serving dish and drizzle in remaining vinegar and pomegranate seeds(and walnuts if using). Add salt and pepper to taste.
  4. Before serving, add salt and pepper to taste.
  5. Enjoy! Yum!

Makes about 12 servings.
