{ Watermelon Balsamic Salad }

It’s National Watermelon Day! Let’s all go home and make a refreshing watermelon salad! Here is one of my favorites with greens, watermelon, green onion, blueberries, candied pepitos and a balsamic vinaigrette.

{ ingredients }

DRESSING:

  • 1/4 cup olive oil
  • 3 Tbs. balsamic vinegar
  • Salt & pepper to taste
SALAD:
  • 3-4 cups mixed greens
  • 3 cups sliced watermelon
  • 1 cup blueberries
  • 1/4 chopped fresh mint (more or less depending on love of mint)
  • 4 green onions, chopped
  • Candied pepitos (OPTIONAL: I just candied pepitos in a pan with a Tbs. of sugar until toasted and the sugar starts to crystalize)

{directions }

  1. To make the dressing, add oil and vinegar to a small jar and shake to combine.
  2. For the salad, toss all ingredients until well combined. Toss in dressing or serve on the side and top with pepitos.
  3. Enjoy! Yum!

Makes 6 servings.
