Chili Roasted Sweet Potatoes

{ Chili Roasted Sweet Potatoes }

I love these Cumin Roasted Sweet Potatoes so much, that I wanted to try them with chili powder instead. I hope you try them too! Here is a recipe for roasted sweet potatoes with chili powder.

 { ingredients }

  • 2 large sweet potatoes, skinned and cut into 1-inch cubes
  • Olive Oil (or coconut oil)
  • 1 tsp. medium chili powder (maybe more to taste)
  • 1 tsp. adobe chili powder
  • Fresh ground sea salt and pepper (to taste)

 { directions }

  1. Preheat oven to 375 degrees.
  2. Put sweet potatoes in a bowl and drizzle with oil, chili powder, salt and pepper. Stir until fully coated
  3. Place mixture on a baking sheet and cook for 25-30 minutes. Cook until potatoes are cooked and slightly browned and crispy.
  4. Add more salt and pepper to taste.
  5. Enjoy! Yum!

{ Other Ideas  }
Instead of chili powder or cumin, roast sweet potatoes with

  • Just salt and pepper
  • Garlic salt and fresh rosemary
  • Honey and fresh thyme
  • Curry powder

Makes about 6 servings. Serve as a side with Spicy Quinoa Tacos  or simply top with Greek yogurt , onions and BBQ sauce (as pictured), and eat as a meal.
