Lemon Dill Quinoa

{ Lemon Dill Quinoa }

My dill is looking great this year, and I want to enjoy it before the caterpillars get to it! I was inspired by my Spinach Dill Couscous, but wanted to make a heartier version with quinoa. Here is an easy recipe for lemon dill quinoa.

{ ingredients }

  • 3 cups prepared quinoa
  • Juice from two lemons
  • 1 cup cherry tomatoes, halved (I used yellow cherry tomatoes bc they are my favorite)
  • 1/4 cup green onions, sliced
  • 3 Tbs., fresh snipped dill
  • Freshly ground sea salt and pepper to taste

 { directions }

  1. Combine all ingredients. Cover and chill for 1-12 hours before serving.
  2. Enjoy! Yum!

Makes about 6-8 servings.
