{ Roasted Purple Potatoes & Fennel }

Who doesn’t love roasted potatoes? Add some fresh herbs and fennel….um…YUM! Here is an easy recipe for roasted purple potatoes and fennel with fresh herbs.

{ ingredients }

  • 1 large fennel bulbs
  • 1-2 lbs. purple potatoes (mine were small so I roasted them whole, but if they are larger, half them)
  • 2 Tbs. olive oil
  • 1 Tbs. fresh rosemary, chopped
  • 1 Tbs. fresh thyme leaves
  • Salt and pepper to taste

{ directions }

  1. Preheat the oven to 400 degrees. Roughly chopped the fennel bulbs. Place the fennel and potatoes on a baking sheet and drizzle with oil. Roast for about 25-30 minutes, or until potatoes are cooked through.
  2. Add salt and pepper to taste and serve.
  3. Enjoy! Yum!

Makes about 4-6 servings.
