Summer BBQ Chopped Salad

{ BBQ Chopped Salad }

I went to Red Rock last week and was reminded how much I LOVE their Texas “Chop House” Salad! After craving it for a few days, this was my attempt at recreating it, and it turned out pretty well…if I do say so myself!

Here is a recipe for a summer BBQ chopped salad.

{ ingredients }


  • 1 cup plain Greek yogurt
  • Juice from one lime
  • Big handful of fresh herbs (I used basil, thyme and tarragon)
  • 2 Tbs. olive oil
  • 1 tsp. honey
  • Salt and pepper to taste
  • 3 cups spinach
  • 1 cup chopped jicama
  • 1 cup cherry tomatoes, halved
  • 1/2 bell pepper, chopped
  • 1 cucumber, peeled and chopped
  • 1/2 red onion, chopped
  • 1 cup black beans
  • Avocado (as much as as little as you would like)
BBQ SAUCE: (you can use store-bought if you want, but this homemade is sooooooo yummy)
  • 14.5 oz can of fire roasted tomatoes
  • 1/4 tsp. apple cider vinegar
  • 1/2 cup brown sugar
  • 1/4 tsp. of smoked paprika
  • 1/4 tsp. celery seed salt
  • 1 tsp. of molasses
  • 5 dashes of hot sauce (Frank’s) – more or less to taste
  • 4 dashes of hot sauce (Habanero) – more or less to taste
  • 1/4 tsp. honey
  • 1/4 tsp. garlic salt
  • Cracked black pepper to taste

{directions }

  1. To make the BBQ sauce, add all ingredients to a pan, whisk together and bring to a boil. Let simmer for 15 minutes and remove from heat. Blend in food processor or with an immersion blender and cool before serving.
  2. To make the dressing, put all ingredients in a food processor and pulse until smooth. Taste and add salt and pepper to taste. Chill until ready to use.
  3. For the salad, toss all ingredients until well combined. Toss in dressing, top with avocado and drizzle with BBQ sauce.
  4. Enjoy! Yum!
