Jicama & Apple Slaw

{ Jicama & Apple Slaw }

Ever since I made this salad, I’ve been CRAVING jicama! Here is a quick and easy recipe for jicama slaw with apples and red onion.

{ ingredients }

  • 1large jicama, peeled
  • 1 large green apple, peeled
  • 1/4 of a red onion
  • Juice from 2 limes
  • Juice from 1 lemon
  • 2 Tbs. honey (OPTIONAL)
  • 2 tsp. fresh tarragon, chopped
  • Salt and pepper to taste

{directions }

  1. Slice jicama, apple and onions uniformly. You can do small slices or julienne them. (I used my food processor with the slicing attachment for this, but you can use a mandoline or cut the veggies by hand)
  2. Mix all in a bowl with juice from one lime.
  3. Add the remaining juice, honey, tarragon, salt and pepper to a small bowl and stir until well combined. Pour over slaw and stire until well coated.
  4. Refrigerate for at least an hour before serving.
  5. Enjoy! Yum!

Makes 6 servings. Make and serve or make the day ahead and refrigerate until serving.
