{ Creamy Cucumber Salad }

I found the most beautiful cucumbers at the Farmers Market last week that were just screaming to be made into a salad. Here is a recipe for a creamy cucumber salad with herbs, onion and capers!

 { ingredients }

  •  2-3 cups of cucumbers (I used 2 large), peeled, and sliced to half moons
  • 1/4 of a red onion, finely sliced
  • 3-4 Tbs. capers
  • 3/4 cup plain greek yogurt
  • 1/4 cup of herbs (I recommend dill, tarragon and parsley), chopped
  • Plenty of sea salt & ground pepper

{directions }

  1. Combine cucumbers, onion and capers together in bowl.
  2. Add in yogurt and add herbs. Stir until combined. Add salt and pepper to taste.
  3. Serve immediately or refrigerate for later.
  4. Enjoy! Yum!

Makes 4 servings. 68 calories per serving.
