Vegan Golden Beer Risotto

{ Golden Beet Risotto }

After buying some huge gorgeous golden beets, and seeing this recipe,  I had a dinner plan! As always, I couldn’t’ just follow a recipe…I added some fresh oregano and rosemary, added more wine and made this “labor of love” a bit easier by chopping my onion, shallot, garlic and beets in my food processor and combining in my risotto maker! This is an AWESOME vegan beet risotto, made with golden beets. I was shocked at how earthy the beets made rice, and how creamy it was without any cream, butter or cheese!

{ ingredients }

  • 1 Tbs. olive oil (I used Tuscan Herb)
  • 2 Tbs. coconut oil
  • 3 large garlic cloves,
  • 1 large shallots
  • 1 white onion
  • 2 large golden beets, peeled
  • 1 cup arborio rice
  • 1 cup dry white wine
  • 4-6 cups vegetable broth (store-bought or homemade)
  • Handful of fresh herbs, finely chopped (I used oregano and rosemary, but I think it would be great with thyme and/or sage as well)
  • Sea salt and black pepper to taste
  • Roasted pepitos and sprouts (optional for garnish)

 { directions }

  1. Add the garlic, shallot and onion to the food processor and chopped until finely diced.
  2. In a risotto maker on Sauté setting, add the oil and the onion mixture and sauté until about three  minutes. Add the wine and let reduce for about five minutes.
  3. While the wine starts to reduce, add the beets to the food processor (I had to quarter these before tossing them in) and pulse until it is finely diced.
  4. Add in the beets and rice to the pot, and stir until evenly coated.
  5. Pour in 4 cups of the broth, coconut oil, half the herbs and plenty of pepper. Cover and change to Risotto setting and let sit for about 30-40 minutes, stirring occasionally.
  6. When almost all of the liquid is absorbed, stir in more broth as needed. Cook until the rice is al dente, and then add the remaining herbs. Taste and add salt and pepper as needed.
  7. Spoon the risotto into bowls and top with pepitos and sprouts (if using). I also topped with a bit more fresh cracked pepper.
  8. Enjoy! Yum!

Makes about 8 servings. Only 185 calories per serving.
