Mandarin Salad

{ Mandarin Salad }

This mandarin salad is one of my favorites from Betty! I made just a couple changes.

Here is my recipe for a mandarin salad with cucumber, celery, candied pepitos and a sweet vinaigrette!

{ ingredients }

DRESSING:

  • 1/4 cup vegetable oil
  •  2  Tbs. agave
  •  3 Tbs. apple cider vinegar
  •  2 Tbs. fresh parsley, chopped
  •  1/2 tsp. salt
  • Dash pepper
CANDIED PEPITOS: (You can do this with any nuts: almonds, walnuts, pecans, etc.)
  • 1/4 cup pepitos (I like the roasted salted, but you can do this with plain unroasted as well)
  • 4 tsp. sugar
SALAD:
  • 1/2 small head lettuce, torn into bite-size pieces (about 3 cups)
  • 1/2 bunch romaine lettuce, torn into bite-size pieces (about 3 cups)
  • 1 cucumber, peeled and chopped
  • Handful of sprouts (I used sweet pea sprouts)
  •  2 medium celery stalks, chopped (about 1 cup)
  • 1/4 of a red onion, diced
  •  3 medium green onions, thinly sliced
  •  1 can (11 oz) mandarin orange segments, drained

{directions }

  1. In pan, cook pepitos and sugar over low heat for about 10 minutes, stirring constantly, until sugar is melted and seeds are coated. Make sure you keep an eye on them…I’ve burnt mine several times! Remove from pan and cool on parchment paper. Once cool, break apart.
  2. Mix all dressing ingredients, except for oil, until well combined.
  3. Add oil slowly.
  4. Mix salad ingredients in large bowl.
  5. Toss with dressing, and top with candied pepitos
  6. Enjoy! Yum!

Makes 9-10 servings. About 130 calories per serving.
