Citrus Basil Quinoa Salad

{ Citrus Basil Quinoa Salad }

As the weather starts to get warmer, I’m craving cookouts and patio time! Aren’t you? This is a great side for a potluck or side salad! Here is a recipe for a citrus basil quinoa salad with tomatoes, cucumber, jalapeno, feta and green onion.

{ ingredients }

  • 3 cups of quinoa, cooked
  • 1 cup cherry tomatoes, halved
  • 1 jalapeno, finely diced (optional)
  • 1/3 cup green onion, chopped
  • 1 cucumber, peeled and chopped
  • 1/2 cup feta cheese (optional)
  • 4 Tbs. fresh basil, chopped
  • 2 Tbs. olive oil (I used a jalapeno oil)
  • Juice from 2 limes
  • Juice from 1 orange
  • Dash of cumin
  • Salt & pepper to taste

{ directions }

  1. In a large bowl, combine quinoa, veggies, salt and pepper. Squeeze the fresh lime and orange juice into the bowl and drizzle with oil. Stir in cheese and basil.
  2. Marinate in the refrigerator 30 minutes.
  3. Enjoy! Yum!

{ Additional Add-Ins & Tips}

  • Add in garbanzo beans and/or black beans
  • For added char flavor, grill the jalapeno before adding
  • Top with avocado

Makes about 4 servings. Served here with grilled vegetables.
