I was so excited to get a dehydrator and start making my own fruit roll-ups! We’ve had this dehydrator for awhile, but my husband had taken it over to make jerky (which grosses out this vegetarian)…I finally got things all cleaned out and found the trays it came with so I could try these fruit leathers. This is a strawberry fruit leather recipe with no added sugar, but you could make these with almost any fruit!

{ ingredients }

  • 5 cups strawberries, hulled
  • Juice from 1 lime
  • Agave or honey to sweeten (OPTIONAL)

{ directions }

  1. Combine all ingredients and blend until smooth. I used a food processor, but you could use a blender, Vitamix or immersion blender.
  2. I used a dehydrator rack with trays, and this was enough for 2 racks . Add a bit of vegetable oil to each tray and spread with a paper towel. This will help avoid sticking. (if your dehydrator does not have trays, lay down parchment paper in each rack)
  3. Pour the strawberry mixture into two separate trays.
  4. Set dehydrator for 135 degrees and leave for 6-8 hours. Check at 6. You’ll know these are done when they are no longer sticking to your fingers.
  5. Take out and cut into slices. Store in an airtight container for up to a week.
  6. Enjoy! Yum!
