Hand-Chopped Pesto

{ Rustic Hand-Chopped Pesto }

I love pesto! I love pesto on veggies or tossed with pasta. I also love pesto as a garnish to add a bit more herb and garlic to a dish. Sometimes I need a small amount of a quick pesto like to top my Tomato, Fennel, Chickpea & Bread Soup. This is a quick and easy pesto recipe that is hand-chopped and just as quick as just chopping up your herbs.

{ ingredients }

  • 2 cloves garlic
  • 1 handful fresh basil leaves
  • 2 Tbs. olive oil (I used Tuscan Herb)
  • 2 Tbs. Parmesan
  • Juice from 1/4 of a lemon
  • Salt and pepper to taste

 { directions }

  1. Minced your garlic and your basil together on a cutting board with a sharp knife until chopped well and mixed.
  2. In a small bowl, stir the garlic, basil, oil, cheese and salt and pepper until well blended.
  3. Store in the fridge until ready to serve.
  4. Serve on top of one of your favorite dishes….pasta, pizza, veggies, soup, quinoa, etc.
  5. Enjoy! Yum!

Makes about 4-6 Tbs. Just enough to garnish a few plates.
