Chipotle Sweet Potato Soup

{ Chipotle Sweet Potato Soup }

I think it is time for SOUP SATURDAY again! This is not much different from other soups that I’ve shared. It is a sweet, spicy silky soup that is great for a meal or a side. Here is an easy recipe for a creamy sweet potato soup with chipotle chili.

{ ingredients }

  • 1 stick of butter
  • 1 yellow or white onion, chopped
  • 4  sweet potatoes, peeled and chopped
  • 2 carrots, peeled and coined
  • 2 parsnips, peeled and chopped
  • 2 Tbs. chipotle chili powder (more or less to taste)
  • 8 cups of vegetable stock
  • Salt & pepper
  • 1/2 cup of coconut milk (unsweet)
  • Dollop of plain Greek yogurt (optional)
  • Fresh lime juice (optional)

{ directions }

  1. Heat the onion in a large pot with the butter. Cook for 5 minutes until softened. Stir in the chili powder and cook for 1 min, until fragrant.
  2. Add the sweet potatoes, carrots, parnsips, vegetable stock and a dash of salt and pepper, bring to the boil, then reduce the heat. Cover and cook for 20-30 minutes until vegetables are tender.
  3. Use immersion blender to blend until smooth. Pour in the coconut  milk while blending. Add salt and pepper. (to me, potato soups always need plenty of fresh cracked sea salt)
  4. Garnish with a dollop of Greek yogurt, a squeeze of fresh lime juice and red pepper flakes, and serve with warmed tortillas.
  5. Yum! Enjoy!

Makes about 8-10 servings. 221 calories per serving. Great the next day (as all soup is).
