Pomegranate, Blue Cheese & Pear Salad

{ Pomegranate, Pear, Blue Cheese & White Balsamic Salad }

I wanted a light salad for Thanksgiving and had my heart set on adding pomegranate seeds (because they are so pretty). This salad is hearty enough to eat for a meal, but light enough for a side salad. The white balsamic keeps it clean and fresh. Here is a recipe for a salad with pomegranate seeds, blue cheese crumbles, fresh pear and a white balsamic vinaigrette. 

{ ingredients }

DRESSING:

  • 1/2 cup white balsamic vinegar
  • 1 Tbs. Diced shallots
  • 1 tsp. minced thyme
  • 1 shallot, diced
  • 1/2 tsp. salt
  • plenty of fresh cracked pepper
  • 1/2 cup EVOO 
SALAD:
  • 2 lg. romaine (or your preferred greens)
  • Seeds from one pomegranate
  • 1 ripe Asian pear, sliced
  • 3 green onions, diced
  • 1/2 cup blue cheese crumbles

{directions }

  1. Mix all vinaigrette ingredients other than oil well.
  2. Add oil slowly.
  3. Mix salad ingredients in large bowl.
  4. Toss with dressing.
  5. Enjoy! Yum!

Makes 8 servings.
