Vanilla Cupcakes

{ (the best) Vanilla Cupcakes }

Now these aren’t just any vanilla cupcakes! These are THE vanilla cupcakes, perfected and tweaked from other recipes and combined to make the best vanilla cupcake with the best cream cheese frosting. This recipe has Greek yogurt that keeps these cupcakes so moist and fluffy. My favorite is to top them with a cream cheese frosting with a hint of lemon zest. So good! 

{ ingredients }

CUPCAKES

  • 1 2/3 cups all purpose flour
  • 1 cup sugar
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup butter, room temperature
  • 3 egg whites
  • 1 1/2 tsp vanilla extract
  • 1 cup vanilla Greek yogurt

CREAM CHEESE FROSTING

  • 2 sticks butter
  • 8 ounces cream cheese
  • 1 teaspoon vanilla extract
  • Juice and zest of 1 lemon (opional)
  • 1 cup powdered sugar 

{ directions }

CUPCAKES

  1. Preheat oven to 350 degrees.
  2. Whisk together flour, sugar, baking soda and baking powder in a large mixing bowl.
  3. Add butter, egg whites, vanilla and yogurt and mix on medium speed until smooth.
  4. Fill cupcake liners a little more than half way.
  5. Bake 18-20 minutes.
  6. Allow to cool for 1-2 minutes, then remove to cooling rack to finish cooling.

FROSTING

  1. While cupcakes bake, whisk together all ingredients except for the sugar. Ads in the sugar slowly and taste, you can always add more.
  2. Store in the fridge until ready to frost.

When cupcakes are cool, frost and serve! I like to top with a bit of the lemon zest and/or fresh fruit!
