{ Farro Risotto with Tomatoes & Sweet Potatoes }

I surveyed my kitchen the other night and found farro and some sweet potatoes. I also knew I had a cheap bottle of Pinot Grigio in the fridge so inspired by this recipe, I made this vegan farro risotto with cherry tomatoes and roasted sweet potatoes (those are some of my very favorite words). The result was creamy, but dairy and guilt-free!

{ ingredients }

  • 1/4 cup extra-virgin olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 cups farro
  • 1 cup dry white wine
  • 4 cups of vegetable broth
  • 1 cup (or a bit more) of fresh cherry tomatoes
  • Salt and freshly ground pepper
  • Sweet potato, peeled and chopped into 1-inch pieces
  • Handful of fresh basil, chopped

 { directions }

  1. Preheat the oven to 375 degrees.
  2. Drizzle some EVOO in a large saucepan. Add the onion and cook over medium heat until softened, about 2 minutes. Add the garlic and a bit more oil if needed and cook, stirring for another couple of minutes.
  3. Add the farro and stir until coated with oil. Pour in the white wine and let it simmer for about 2 minutes. Lower the heat add 1 cup of the stock and cook, stirring, until absorbed. Repeat with the remaining water, adding 1 cup at a time and stirring constantly until the farro is just tender and suspended in a creamy sauce. This process should take about 30 minutes total.
  4. While you are stirring your risotto, spread the sweet potato on a bake sheet and drizzle with oil and salt and pepper. Roast for about 12-15 minutes. Peek in after 10 minutes to stir. Remove from the oven when the sweet potato starts to brown a tiny bit.
  5. Stir the tomatoes and basil into the risotto and simmer for about 5 more minutes (you want to cook the tomatoes to that perfect point just before they burst). While still on the heat, add in the sweet potato and drizzle a bit more oil and PLENTY of salt and pepper.
  6. Spoon the risotto into bowls, garnish with extra basil and serve hot.
  7. Enjoy! Yum!

Makes about 6 servings. 255 calories per serving.
