{ Lemon Curry Noodles with Broccoli, Carrots & Leeks }

I found a Vietnamese Lemon Curry Powder at Savory Spice shop in OKC, and couldn’t wait to cook with it. I decided to use it in a noodle dish. Here is the recipe for lemon curry noodles with broccoli, carrots and leeks!

{ ingredients }

  • Brown Rice Thai noodles (I used the kind that came in little packs in the box and I used 1 pack)
  • Yellow onion, chopped
  • 1 Tbs. coconut oil
  • 1 leek, cleaned and chopped, white part only
  • 1 head of broccoli, chopped roughly
  • 1 cup chopped carrots
  • 3 Tbs. Vietnamese Lemon Curry Powder – or more to taste
  • 2 Tbs. Curry Powder (I used Ms. Netties’)
  • 1 tsp. red pepper flakes
  • 1 tsp. Cumin seeds, toasted and ground
  • Dash of Coriander
  • Dash of Turmeric
  • 1 tsp. lemon zest
  • 2 cups Coconut milk, unsweet
  • 2 tbs. brown sugar
  • 1 inch fresh ginger – grated
  • 3 green onions – chopped
  • Fresh cilantro

 { directions }

  1. Make the noodles as directed  and set aside (boil water, stir in noodles and remove from heat for 5 minutes).
  2. In a large pan, saute onions in coconut milk for about 5 minutes. Add in the leeks, sugar and spices and cook until soft, stirring regularly.
  3. Pour in coconut milk, lemon zest, ginger and pepper flakes. Bring to a boil and turn heat down to simmer. Taste and add additional spices to taste (I did a few shakes of each of the extra spices AND I added a bit more curry) – taste and adjust as needed.
  4. Add in broccoli and carrots and simmer until veggies start to cook.
  5. Scoop noodles from pot into pan and let mixture simmer a few minutes for the noodles to soak up the sauce.
  6. Serve in bowls topped with green onions and cilantro (and more red pepper flakes if you prefer).
  7. Enjoy! Yum!

Makes about 4 servings.
