{ Green Beans & Tomatoes }

The green beans at the farmers market were smiling and me and begging for me to bring them home. They were so fresh and flavorful! Pairing them simply with sweet cherry tomatoes, onion, garlic and white wine vinegar, they were perfect! Here is a recipe for a green bean and tomato salad.

{ ingredients }

  • 1 pound green beans, washed and ends removed
  • Handful of cherry tomatoes
  • 1/4 red onion, chopped
  • 3 cloves of garlic
  • 2 Tbs. Coconut oil
  • 2 Tbs. white wine vinegar
  • Fresh ground salt and pepper

{ directions }

  1. Add onion and 1 Tbs. of coconut oil in large pan. Sauté for 5 minutes to soften.
  2. Stir in the beans and garlic and remaining coconut oil and sauté for about 5 minutes, before adding in the tomatoes and vinegar.
  3. Sauté for about 5-10 more minutes until beans are cooked, but still crispy. Remove from heat just before the tomatoes burst.
  4. Set aside to cool. Serve warm or room temperature.
  5. Before serving, add salt and pepper to taste.
  6. Enjoy! Yum!

Makes about 6 servings.
