{ Caramelized Onion, Egg & Smoked Mozzarella Tart }

Caramelized onions, cream, cheese and eggs….decadence! Here is a recipe for an easy caramelized onion tart with eggs, cream & smoked mozzarella. Great for a dinner or a brunch!

{ ingredients }

  • Pie crust (store-bought or homemade – I always use  this same recipe)
  • 1 yellow onion, roughly chopped
  • 1 1/2 Tbs. sugar
  • EVOO
  • 4 eggs
  • 1/3 cup cream
  • 1/2 cup smoked mozzarella cheese, shredded
  • Handful of cherry tomatoes (optional)
  • Plenty of fresh ground pepper

 { directions }

  1. Preheat oven to 400ºF.
  2. Sauté onion with a drizzle of EVOO and the sugar on medium heat, stirring often until onions have slightly browned.
  3. While onions cook, mix eggs and cream in a small bowl until well combined. Add fresh cracked pepper.
  4. When the onions are caramelized, it is time to build your tart. Drain onions on paper towel to soak up excess oil. Using your prepared crust, fill the bottom of the crust with the onions. Next, pour the egg and cream mixture over the onions, filling the tart. Top the cheese and tomatoes (if using). Add pepper (and salt) as desired.
  5. Bake for 25 minutes, until the edges barely start to brown.
  6. Let cool for 10 minutes and serve warm.
  7. Enjoy! Yum!

Makes about 6 servings. Some of my other favorite tarts are roasted beet & chèvre, mushroom, onion & rosemary and caramelized onion & tomato!
