{ Quinoa & Sweet Potato Cakes with Spicy Mango Yogurt }

In the words of my husband, “I could bath in this sauce!” This entire meal was a pantry challenge and a happy accident. We didn’t have groceries so I surveyed the pantry and fridge and knew I had quinoa and sweet potatoes so I decided to make quinoa cakes. I knew I needed a sauce and found some Greek yogurt, mango chutney and Sriracha! This is one of my favorite meals I’ve made in awhile! Here’s the recipe for quinoa and sweet potato cakes with spicy mango yogurt sauce.

{ ingredients }


  • 2 cups Vegetable Broth (or water)
  • 1 medium  red onion, finely chopped
  • 2 cloves garlic, minced or pressed
  • 3 Tbs. coconut oil (or olive oil)
  • 1 cup dried quinoa
  • 1 sweet potato, peeled and chopped into small squares
  • 2 Tbs. Ground Cumin (or more to preference)
  • 1 Tbs. smoked paprika (or more to preference)
  • 1 Tbs. adobe chili powder (or more to preference)
  • Salt and pepper to taste
  • 2 eggs
  • 1/2 cup Wheatgerm


  • 1 cup Greek yogurt
  • 2 Tbs. Mango chutney
  • 1 Tbs. Sriracha  (or more or less to preference)
  • 2 Tbs. fresh Basil, chopped
  • Juice from 1/2 of a lime

 { directions }

  1. Make quinoa according to package with vegetable broth and set aside.
  2. Heat oil in saucepan over medium heat. Add onion and garlic, and cook 2 minutes. Add cumin, chili powder and paprika, and sauté 1 minute. 
  3. Add chopped sweet potato and sauté until potato softens. Add more spices, salt and pepper to taste.
  4. Stir in quinoa and add more spices, salt and pepper to taste. Set aside to let cool for a few minutes and make your sauce!
  5. Mix the yogurt, chutney, Sriracha, lime juice and basil until well combined. Store in the fridge.
  6. Heat up a griddle or put a bit of oil in a pan (I did mine on the griddle, but you could brown these on the grill or in a pan).
  7. Once quinoa mixture is cool enough to touch, stir in two eggs until well combined. Using your hands, mold patties and roll in wheatgerm. (I stole this idea from my favorite spicy rice balls recipe!)
  8. Place patties on the griddle (or in a pan with oil). Let sit for a few minutes and then flip. You want both sides to start to brown and get a bit crunchy.
  9. Serve with the yogurt sauce!
  10. Enjoy! Yum!

Makes about 8 patties (4 servings). This is great leftover as well, hot or cold!
