{ Spinach & Dill Couscous }

My mom makes this every Fourth of July. It is one of my all-time favorite sides. It has only been a couple months since the 4th festivities, and I’ve been craving it so I decided to make it and share it with you! Here is a recipe for a couscous salad with spinach, dill and feta.

{ ingredients }

  • 3 cups prepared couscous
  • 1/4 cup olive oil
  • 4 Tbs. lemon juice
  • 3 cups of fresh spinach
  • 1/4 cup green onions, sliced
  • 3 Tbs., fresh snipped dill
  • 1/3 cup feta cheese
  • Salt and pepper to taste

 { directions }

  1. Combine oil and lemon juice. Add oil mixture to couscous. Let marinate for about 25 minutes or until completely cool.
  2. Stir in dill, spinach, onions, feta and plenty of salt and pepper. Cover and chill for 2-12 hours before serving.
  3. Enjoy! Yum!

Makes about 6-8 servings.
