{ Pimento Cheese }

Hey OKCers, have you ever had Iron Starr’s Pimento Cheese appetizer? My husband and I order it every time we are there. Recently, we decided to recreate it at home. Here is our version of pimento cheese. We even grilled our bread like Iron Starr and served with celery, olives and pickled okra.

ingredients }

  • 2 cups extra sharp cheddar cheese, shredded (We used half Christian Cheese Black Peppercorn Cheddar and half Christian Cheese Hot Cowboy Cheddar)
  • 8 ounces of cream cheese
  • 1/4 cup mayonnaise (Homemade or store-bought)
  • 1/4 tsp. garlic powder
  • 1/2 tsp. ground cayenne
  • 1/2 tsp. onion powder
  • 1/2 tsp. chili powder
  • 1-2 jalapenos, seeded and minced (choose your own heat preference)
  • 4 ounces pimentos, drained and diced
  • Salt and pepper to taste
  • Bread (we served with sourdough, sliced and slightly grilled)
  • Celery

{ directions }

  1.  Mix all ingredients until well combined.

  2. Serve with celery and grilled bread

  3. Enjoy! Yum!
