{ Chocolate Chip Zucchini Bread }

I have an abundance of zucchini and summer squash this summer! I have been baking and sautéing non-stop, and I realized I hadn’t made zucchini bread yet! This is adapted from this award winning recipe. Here is a recipe for chocolate chip zucchini bread!

{ ingredients }

CRUMB

  • 1/2 cup light brown sugar
  • 2 Tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • Dash of nutmeg
  • 1/4 cup unsalted butter, cold, cut into pieces 

BREAD

  • 1 large egg, beaten
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup apple sauce
  • 1 cup grated zucchini (about 1 large)
  • 2 teaspoons pure vanilla extract
  • 1 and 1/2 cups all-purpose flour 
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1cup semi-sweet chocolate chips

{ directions }

  1. Preheat oven to 350 and spray a 9×5 baking pan.
  2. In a small bowl, combine crumb ingredient and mix with your hands until it is combined and looked like damp sand. 
  3. In a medium bowl, whisk together egg, sugar, zucchini and apple sauce.
  4. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon and nutmeg.
  5. Pour zucchini mixture into to and whisk until well combined, then stir in chocolate chips. 
  6. Pour mixture into prepared baking pan and top with crumble. 
  7. Bake for 45-50 minutes, until lightly browned on the top and you can insert a toothpick in the center and it comes out clean.
  8. Enjoy! Yum!

Makes about 1 loaf. It’s so good, you may need to double it! Eat one now and freeze the other!
