{ Roasted Beets with Garlic & Oregano }

Beets are a year-round staple in my household. Whether they are golden beets, or perfectly baked chips, I love them all! Beets are so sweet and delicious and also offer great nutritional value to any meal. Here is an easy recipe for roasted beets with garlic and oregano.

{ ingredients }

  • 4 large beets, peeled and cut into 3/4 inch cubes
  • 4 cloves of garlic (or more if preferred), quartered
  • 2 Tbs. EVOO
  • 2 Tbs. fresh oregano, chopped (honestly, you could toss in any herb you’d like – thyme, rosemary, sage)
  • Salt & pepper to taste

{ directions }

  1. First preheat oven to 425ºF.
  2. Toss beets with EVOO, garlic, oregano, salt and pepper and pour onto baking sheet.
  3. Place in oven and roast for 20-25 minutes, until beets are tender.
  4. Enjoy! Yum!

Makes 4 servings. (90 Calories per Serving)
