{ Quinoa Salad with Corn, Black Beans & Tomatoes }

I love quinoa and you should too! This recipes is full of summer veggies, fresh lime juice and cilantro. This is great as a main dish or a side. Here is a recipe for a quinoa salad with tomatoes, corn, black beans and jalapeño.

{ ingredients }

  • 1 cup uncooked quinoa, well rinsed (I always prefer rainbow quinoa)
  • 2 cups vegetable broth (you could also use water)
  • 1/3 cup diced red onion
  • 4 Tbsp fresh lime juice
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup of fresh corn (about 2 ears worth)
  • 2 cups of tomatoes (I used yellow and red cherry and grape tomatoes, but any tomatoes will do)
  • 1 jalapeño, seeded and finely chopped (add another pepper or a half of pepper if you want more heat)
  • 1 Tbs. smoked cumin (I love Ms. Netties)
  • 1/4 cup chopped cilantro, including tender stems, packed
  • 3 Tbsp olive oil
  • Salt and pepper to taste

Adapted from this recipe. I just added more lime juice, cumin and took out the cheese to make it vegan!

 { directions }

  1. Prepare quinoa but bringing broth to a boil. Stir in quinoa and lower heat to simmer for 10-15 minutes. 
  2. While quinoa is cooking prepare your veggies. Add corn, beans, onion, tomatoes and peppers to a bowl. Add salt and pepper to taste.
  3. Once quinoa is done, let it cool to room temperature and stir into veggie and bean mixture. Add oil, lime juice, cilantro and cumin and stir until well combined.
  4. Serve alone as a side or topped with grilled or roasted vegetables for a main dish.
  5. Serve at room temperature.
  6. Enjoy! Yum!

Makes about 6 servings(142 calories per serving). This is great leftover as well!
