{ Compound Butter }

 

This is not my healthiest post…or habit…but I LOVE butter! Who doesn’t? Now, mix in roasted garlic and herbs or a spicy  jalapeño, and voila, compound butter! Use on top of veggies (or meat for the rest of you out there), as a spread, as a dip or as part of a sauce. 

Here are two of my very favorite compound butter recipes,  jalapeño compound butter and garlic herb compound butter. 

{ ingredients }

 Jalapeño 

  • 1 stick of unsalted butter
  • 1 large  jalapeño, seeds removed and finely diced
  • 2 Tbs. of red onion, finely diced
  • Juice from 1/2 of a lime
  • Salt and pepper to taste

 Roasted Garlic Herb 

  • 1 stick of unsalted butter
  • 2 cloves of roasted garlic
  • Handful of fresh herbs, finely chopped (I used basil, thyme, rosemary and oregano, but any herbs will work and taste great)
  • Salt and pepper to taste

{ directions }

  1. Take the butter out of the fridge and chop it up. Let it sit in room temperature to soften. 
  2. Once the butter is soft, mix in your desired ingredients. You can do this by hand with a fork, in a food processor or in a a mixer with the whisk attachment. Mix until well combined and smooth. 
  3. Remove butter from the bowl and spoon onto parchment paper or plastic wrap. Roll into a log, a ball OR press into a small dish. Chill for at least two hours before serving.
  4. Enjoy! Yum!
