{ Egg Salad with a Kick }


I’ve been craving egg salad again and tossed this together. It’s a bit different than my previous egg salad post so I thought I’d share. This recipe has a bit more kick with the Worcestershire and fresh dill!

{ ingredients }

  • 5 hard boiled eggs, chopped (I used 3 egg whites and one yoke)
  • 2 Tbs. whole grain mustard
  • 1 Tbs. dijon mustard
  • 2 Tbs. Worcestershire sauce (There are great vegan options!)
  • 1/2 tsp lemon juice
  • 3 Tbs. fresh dill, chopped
  • 1/4 red onion, finely diced
  • 1/2 cup radished, sliced and quartered
  • Salt & pepper to taste

{ directions }

  1. Mix dill, mustard, lemon juice and Worcestershire sauce with plenty of salt and pepper until combined.
  2. Combine eggs and onion in bowl and stir in mustard dressing until well coated.
  3. Serve alone of on a slice of your favorite toast! Enjoy! Yum!

Makes 3-4 servings. Great as a side, appetizer or as a main course.

I served mine on German rye toast, topped with yellow cherry tomatoes! YUM!
