{ Shaved Brussel Sprout & Kale Salad with Lemon Herb Vinaigrette }

 

What makes a great salad? To me it is a combination of tastes: fresh, sweet, tart and salty. I also need crunch and a toasted element. Here is a recipe for an avocado nectarine salad in a cilantro lime dressing.

{ ingredients }

DRESSING:

  • 1/2 cup lemon juice
  • 2 Tbs.olive oil
  • 2 tsp raw honey or maple syrup
  • Handful of fresh herbs, finely chopped (basil, thyme, mint, etc.)
  • 1/2 tsp onion powder
  • 1/2 tsp arrowroot powder
  • Salt and pepper to taste
SALAD:
  • 4 cups shaved brussel sprouts
  • 2 cups of kale, stems removed
  • 1/2 red onion, diced
  • Croutons (optional)
  • 1/2 cup toasted pepitos

{directions }

  1. Mix lemon, honey, herbs and spices until combined well.
  2. Add oil slowly.
  3. To shave the brussel sprouts, run them on a mandolin or shredder.
  4. Add the shaved brussel sprouts to a bowl with the rest of the salad ingredients.
  5. Pour the dressing over the salad and place it in the fridge for 30 minutes so the flavors can marinate.
  6. Enjoy! Yum!

Makes 4-6 servings.
